Combine oregano, olive oil, garlic, capers with juice, salt, pepper and red wine vinegar. Pour over turkey and toss together making sure all of the turkey is coated, then sprinkle with olives and prunes. Cover and marinate overnight. When ready to cook, preheat the oven to 375ºF (190ºC) and add the stock and white wine.
